I made this the other night because I couldn't think of anything else to make with the ingredients I had. I didn't end up putting chicken in it so I ate it the first night as a side with some left-over London broil. The next night I had it as my main dish with a salad .

Ingredients

  • 2 boxes rice-a-roni chicken fajita mix
  • 2 tablespoons olive oil
  • 5 cups chicken broth
  • 1/2 large sweet onion, diced
  • 1 cup celery, chopped
  • 1/2 cup bell pepper, chopped
  • 1 can corn
  • 1 can black beans, drained and rinsed thorougly
  • 1/2 cup salsa (i use pace picante)
  • OPTIONAL:
  • 2 - chicken breasts, cooked and cubed

How To Make speckled rice

  • Step 1
    In a large skillet or pot heat olive oil and saute onion and celery until onion is just translucent.
  • Step 2
    Carefully pour in 4 cups of chicken broth and rice, stirring to combine. Reduce heat, cover and simmer about 20 minutes or until the liquid is mostly evaporated.
  • Step 3
    Combine the seasoning packets with the remaining cup of chicken broth and stir into rice along with the remaining ingredients.
  • Step 4
    Bring heat up to medium and cook, stirring, until liquid is absorbed. Serve hot.
