I made this the other night because I couldn't think of anything else to make with the ingredients I had. I didn't end up putting chicken in it so I ate it the first night as a side with some left-over London broil. The next night I had it as my main dish with a salad .

rice-a-roni chicken fajita mix
2 Tbsp
olive oil
5 c
chicken broth
1/2 large
sweet onion, diced
1 c
celery, chopped
1/2 c
bell pepper, chopped
1 can(s)
1 can(s)
black beans, drained and rinsed thorougly
1/2 c
salsa (i use pace picante)


chicken breasts, cooked and cubed

How to Make Speckled Rice


  • 1In a large skillet or pot heat olive oil and saute onion and celery until onion is just translucent.
  • 2Carefully pour in 4 cups of chicken broth and rice, stirring to combine. Reduce heat, cover and simmer about 20 minutes or until the liquid is mostly evaporated.
  • 3Combine the seasoning packets with the remaining cup of chicken broth and stir into rice along with the remaining ingredients.
  • 4Bring heat up to medium and cook, stirring, until liquid is absorbed. Serve hot.
