I made this the other night because I couldn't think of anything else to make with the ingredients I had. I didn't end up putting chicken in it so I ate it the first night as a side with some left-over London broil. The next night I had it as my main dish with a salad .

Ingredients
- 2 boxes rice-a-roni chicken fajita mix
- 2 tablespoons olive oil
- 5 cups chicken broth
- 1/2 large sweet onion, diced
- 1 cup celery, chopped
- 1/2 cup bell pepper, chopped
- 1 can corn
- 1 can black beans, drained and rinsed thorougly
- 1/2 cup salsa (i use pace picante)
- OPTIONAL:
- 2 - chicken breasts, cooked and cubed
How To Make speckled rice

Step 1In a large skillet or pot heat olive oil and saute onion and celery until onion is just translucent.

Step 2Carefully pour in 4 cups of chicken broth and rice, stirring to combine. Reduce heat, cover and simmer about 20 minutes or until the liquid is mostly evaporated.

Step 3Combine the seasoning packets with the remaining cup of chicken broth and stir into rice along with the remaining ingredients.

Step 4Bring heat up to medium and cook, stirring, until liquid is absorbed. Serve hot.
