spanish tomato rice

This rice has a little bit of a sweeter taste than most spanish rice dishes I've had. It sure does make your house smell good when you're preparing it. This recipe was shared by a long-time family friend.

Ingredients

  • 8 slices bacon
  • 1 cup finely chopped onion
  • 1/4 cup chopped green pepper
  • 1 pound can diced tomatoes, undrained
  • 3/4 cup uncooked long-grain rice
  • 1/2 cup chili sauce
  • 1 teaspoon salt
  • 1/2 teaspoon worcestershire sauce
  • 1 teaspoon brown sugar
  • 1 dash pepper
  • 1 1/2 cups water

How To Make spanish tomato rice

  • Step 1
    In a 10-inch skillet, cook the 8 slices of bacon until crisp; remove the bacon. Pour off half of the bacon fat and discard. Cook the onion and green pepper in the remaining fat until tender. Do not brown the veggies.
  • Step 2
    Add all the other ingredients and stir together. Cover and simmer for 35 to 40 minutes. Crumble the bacon on top.
