My friend Elva taught me how to do "authentic" Spanish Rice - so this is just as good as you get in any restaurant.

Ingredients
- 1 tablespoon vegetable oil
- 1 cup white rice (regular or converted, but not instant)
- 2 tablespoons chopped onion
- 1 clove garlic, minced or pressed through garlic press
- 2 cups water or chicken broth
- 2 teaspoons chicken bouillon granules (if you used water)
- 2 tablespoons chopped peeled tomato (i use some canned diced tomatoes)
- 1/3 cup frozen peas or mixed vegetables
- 1/2 teaspoon ground black pepper
How To Make spanish rice

Step 1In a heavy saucepan, sauté rice in oil over medium heat until rice is brown. Add onion and garlic; sauté another minute or so.

Step 2Add remaining ingredients. Cover; bring to a boil.

Step 3Lower heat and simmer approximately 15 minutes or until all liquid is absorbed.
