My friend Elva taught me how to do "authentic" Spanish Rice - so this is just as good as you get in any restaurant.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup white rice (regular or converted, but not instant)
  • 2 tablespoons chopped onion
  • 1 clove garlic, minced or pressed through garlic press
  • 2 cups water or chicken broth
  • 2 teaspoons chicken bouillon granules (if you used water)
  • 2 tablespoons chopped peeled tomato (i use some canned diced tomatoes)
  • 1/3 cup frozen peas or mixed vegetables
  • 1/2 teaspoon ground black pepper

How To Make spanish rice

  • Step 1
    In a heavy saucepan, sauté rice in oil over medium heat until rice is brown. Add onion and garlic; sauté another minute or so.
  • Step 2
    Add remaining ingredients. Cover; bring to a boil.
  • Step 3
    Lower heat and simmer approximately 15 minutes or until all liquid is absorbed.
