This is a very easy and basic spanish rice recipe that is our "go to" when we prepare Mexican fare.

Ingredients

  • 1/4 c
    vegetable oil
  • 2 c
    rice, long grain
  • 2
    tomatoes, diced
  • 1 small
    onion, chopped
  • 4 clove
    garlic, minced
  • 2 tsp
    cumin
  • 4 Tbsp
    tomato paste
  • 4 c
    chicken stock

How to Make Spanish Rice

Step-by-Step

  1. In a medium saucepan, over medium heat, fry rice in oil until slightly golden, about 3-5 minutes.
  2. Add cumin, onion and garlic and sauté 1 minute.
  3. Add tomato, tomato paste and chicken stock. .Turn down heat to low, cover and cook for about 20 mins, or until stock has absorbed/evaporated.
