This is a very easy and basic spanish rice recipe that is our "go to" when we prepare Mexican fare.

Ingredients
- 1/4 cup vegetable oil
- 2 cups rice, long grain
- 2 - tomatoes, diced
- 1 small onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons cumin
- 4 tablespoons tomato paste
- 4 cups chicken stock
How To Make spanish rice

Step 1In a medium saucepan, over medium heat, fry rice in oil until slightly golden, about 3-5 minutes.

Step 2Add cumin, onion and garlic and sauté 1 minute.

Step 3Add tomato, tomato paste and chicken stock. .Turn down heat to low, cover and cook for about 20 mins, or until stock has absorbed/evaporated.
