This is the best Spanish Rice recipe I've ever had. I found this years ago on the internet, tweaked it a little bit to my liking and have never bought a box of pre-made spanish rice since! Tons of flavor and so quick and easy! Just tastes so fresh and light, goes great as a side to almost anything.

Ingredients
- 1/4 cup butter
- 2 cups uncooked instant rice
- 1 can diced tomatoes, undrained
- 1 cup boiling water
- 2 - beef bouillon cubes
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 - bay leaf
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
How To Make spanish rice

Step 1In a saucepan over medium heat, melt the butter. Add the rice and stir until browned. Add all remaining ingredients; bring to a boil. Reduce the heat; cover and simmer 10-15 minutes or until the liquid is absorbed and rice is tender. Remember to remove the bay leaf before serving!
