My dad and I developed this recipe after eating at a friend's that wouldn't share her recipe. I think our recipe is even tastier, but you must use the Heinz ketchup for the taste to be perfect.

Ingredients
- 6 slices bacon, diced
- 3 tablespoons bacon drippings
- 1 medium onion, sliced
- 1/2 cup bell pepper, chopped
- I cup uncle ben's regular rice
- 2 cups canned chopped tomatoes
- 2 cups water
- 1/4 cup ketchup (use heinz ketchup only)
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
How To Make spanish rice

Step 1In frying pan cook bacon until crisp. Remove and drain. Reserve 3 tablespoons bacon drippings.

Step 2Cook raw rice, onion and bell pepper in drippings until onion is tender. Add the remaining ingredients, except bacon pieces. Cover and simmer until rice is tender and has absorbed all the liquid. Fluff and add bacon.

Step 3I sometimes add diced ham to make this a main dish casserole. I also have used rotel tomatoes to add a bit of spice to the dish.
