My late best friend's sister Anna gave me this recipe years ago. It is the easiest Spanish Rice I ever made and the tastiest!

Ingredients

  • 2 cups long grain rice, uncooked
  • 1/2 cup yellow onion, diced
  • 1 can chicken broth
  • 1 can tomato sauce, (8 ounce)
  • - chili powder to taste or about 1 tsp

How To Make spanish rice

  • Step 1
    Put some oil in a frying pan, about 4 tablespoons. When hot stir in your uncooked rice and let brown until its a golden brown, stirring to prevent browning.
  • Step 2
    When rice is golden stir in your onions until soft.
  • Step 3
    Add chili powder and mix well.
  • Step 4
    Add chicken broth, tomato sauce, and if needed enough water to cover the rice by about 1/4 inch over the top.
  • Step 5
    Bring to a boil, turn burner to low and cover the pan with lid or tin foil. Let cook on low till all the liquid is absorbed about 20 minutes or so.
