  • 14 oz
    chicken broth
  • 1 c
    sour cream
  • 4 oz
    diced green chile peppers
  • 1 c
    monterey jack cheese, grated
  • 8 oz
    can cream style corn
  • 1/4 c
    cilantro, chopped
  • 1 c
    uncooked white rice

How to Make Sour Cream Rice


  1. Spray 8x13-inch casserole dish with cooking spray. Preheat the oven to 350 degrees.
  2. In a large pot, bring the rice and chicken broth to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
  3. Mix the sour cream, chile peppers, 1/2 cup Monterey Jack cheese, corn, and cilantro with the cooked rice. Season with salt.
  4. Pour into the prepared casserole dish. Top with remaining 1/2 cup grated cheese. Bake uncovered for 30 minutes in preheated oven until cheese is bubbly and lightly browned.
