Ingredients

  • 14 ounces chicken broth
  • 1 cup sour cream
  • 4 ounces diced green chile peppers
  • 1 cup monterey jack cheese, grated
  • 8 ounces can cream style corn
  • 1/4 cup cilantro, chopped
  • 1 cup uncooked white rice

How To Make sour cream rice

  • Step 1
    Spray 8x13-inch casserole dish with cooking spray. Preheat the oven to 350 degrees.
  • Step 2
    In a large pot, bring the rice and chicken broth to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
  • Step 3
    Mix the sour cream, chile peppers, 1/2 cup Monterey Jack cheese, corn, and cilantro with the cooked rice. Season with salt.
  • Step 4
    Pour into the prepared casserole dish. Top with remaining 1/2 cup grated cheese. Bake uncovered for 30 minutes in preheated oven until cheese is bubbly and lightly browned.
