How to Make Sour Cream Rice
- Spray 8x13-inch casserole dish with cooking spray. Preheat the oven to 350 degrees.
- In a large pot, bring the rice and chicken broth to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
- Mix the sour cream, chile peppers, 1/2 cup Monterey Jack cheese, corn, and cilantro with the cooked rice. Season with salt.
- Pour into the prepared casserole dish. Top with remaining 1/2 cup grated cheese. Bake uncovered for 30 minutes in preheated oven until cheese is bubbly and lightly browned.
