Ingredients
- 14 ounces chicken broth
- 1 cup sour cream
- 4 ounces diced green chile peppers
- 1 cup monterey jack cheese, grated
- 8 ounces can cream style corn
- 1/4 cup cilantro, chopped
- 1 cup uncooked white rice
How To Make sour cream rice

Step 1Spray 8x13-inch casserole dish with cooking spray. Preheat the oven to 350 degrees.

Step 2In a large pot, bring the rice and chicken broth to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.

Step 3Mix the sour cream, chile peppers, 1/2 cup Monterey Jack cheese, corn, and cilantro with the cooked rice. Season with salt.

Step 4Pour into the prepared casserole dish. Top with remaining 1/2 cup grated cheese. Bake uncovered for 30 minutes in preheated oven until cheese is bubbly and lightly browned.
