Ingredients
- 1 cup long grain rice, uncooked
- 3 tablespoons oil
- 1/2 small onion chopped
- 1 clove minced garlic
- 1 small tomato peeled and chopped
- 1/4 cup fresh or frozen peas and diced carrots
- 2 cups boiling chicken stock
- 1 teaspoon salt
How To Make sopa de arroz (mexican rice)

Step 1Saute the washed,drained rice in the hot oil until golden but not brown. Add the onion, garlic, fresh tomato and vegetables and cook slightly. Add the boiling stock and salt.Return to boil,then lower heat, cover and cook on low setting until rice is tender and liquid has been absorbed. Toss lightly with a fork before serving.
