Okay, I will admit it, I am a fan of all things citrus… Well, most things citrus. This is a fun, comforting side dish that comes together in thirty quick minutes. The citrus notes are a perfect complement to fish, meat, or poultry. Or, you could just make up a batch and eat it by itself. FYI: The main photo for this recipe is my lemon-infused rice, topped with a pan fried boneless pork chop… So yummy. So, you ready… Let’s get into the kitchen.

- 1 cup white rice, long-grained variety (uncooked)
- 1 tablespoon olive oil, extra virgin
- 1/2 teaspoon lemon-pepper seasoning, or more to taste
- 1/4 teaspoon dried basil
- 1 1/4 cups chicken stock, not broth
- 2 tablespoons lemon juice, freshly squeezed
- 1 tablespoon sweet butter, unsalted
- 1 - 2 pinches salt, kosher variety

- 1 tablespoon ponzu sauce

Step 3For this recipe, you will need a saucepan, with a tight-fitting lid that is capable of holding all of the ingredients.

Step 4I cannot expect everyone to make their own chicken stock, so if you choose to use store-bought stock, remember that they usually contain a lot of sodium. Therefore, you might not need to add any additional salt. Up to you.

Step 5Gather your ingredients (mise en place).

Step 6Add the rice, olive oil, lemon pepper seasoning, and basil to a saucepan over medium heat.

Step 7Cook, stirring, until the rice starts to turn translucent, about 3 – 5 minutes.
