This an easy side dish to assemble, with simple ingredients that you probably have at hand. Serve it with other South-of-the-Border favorites, like tacos, burritos, enchiladas… you get the idea. And do not forget a nice big pitcher of margaritas. So, you ready… Let’s get into the kitchen.

How To Make side essentials: awesome spanish rice

  • Step 1
    PREP/PREPARE
  • Step 2
You can use fresh tomatoes for this dish; however, I find that canned tomatoes work quite well. If you are on the lookout for good “canned” tomatoes I wrote two articles on that subject: THE BEST CANNED TOMATOES https://www.justapinch.com/recipes/soup/soup-other-soup/cooking-class-the-best-canned-tomatoes.html?r=1 REMOVING THE BITTER TASTE FROM CANNED TOMATOES https://www.justapinch.com/recipes/sauce-spread/sauce-spread-other-sauce-spread/removing-the-bitter-taste-from-canned-tomatoes.html?r=2
  • Step 3
Gather your Ingredients (mise en place).
  • Step 4
Add the butter and oil to a saucepan over medium heat.
  • Step 5
Chef’s Note: the saucepan should have a tight-fitting lid, and be big enough to hold all the ingredients… this is a one-pan recipe.
  • Step 6
When the foaming subsides, add the rice, and stir to combine with the oil and butter.
  • Step 7
Continue to stir until the rice begins to turn translucent, about 3 – 5 minutes.
  • Step 8
Add the onions and garlic, and stir for an additional 2 minutes.
  • Step 9
Add the salt, cumin, oregano, black pepper, and stir to combine, about 30 seconds.
  • Step 10
Add the tomatoes, and tomato paste.
  • Step 11
Stir to combine, about 30 seconds.
  • Step 12
Add the chicken stock, stir to combine, reduce the heat to medium low, cover, and allow to simmer for 20 minutes.
  • Step 13
Take off the heat, and fluff with a fork or wooden spoon.
  • Step 14
    PLATE/PRESENT
  • Step 15
Before serving, cut the lime in half, and squeeze half over the warm rice, then cut the remaining half into wedges, and serve with the rice, garnish with chopped cilantro (if using). Enjoy.

    Step 16
Keep the faith, and keep cooking.
