side essentials: awesome spanish rice
This an easy side dish to assemble, with simple ingredients that you probably have at hand. Serve it with other South-of-the-Border favorites, like tacos, burritos, enchiladas… you get the idea. And do not forget a nice big pitcher of margaritas. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 tablespoons sweet butter, unsalted
- 1 tablespoon grapeseed oil
- 1 cup long-grain white rice, uncooked
- 3 tablespoons yellow onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt, kosher variety
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- - black pepper, freshly ground, to taste
- 1 tablespoon tomato paste
- 14 ounces chopped tomatoes, drained, one can
- 1 1/2 cups chicken stock, not broth
- ADDITIONAL ITEMS
- 1 large lime
- - cilantro, for garnish
- - black olives, sliced
- OPTIONAL ITEMS
- - crushed red pepper flakes
- - paprika, hot or mild
- - chopped jalapeno
- - sour cream
- - more cumin :-)

Step 2You can use fresh tomatoes for this dish; however, I find that canned tomatoes work quite well. Step 3Gather your Ingredients (mise en place).

Step 4Add the butter and oil to a saucepan over medium heat.

Step 5Chef’s Note: the saucepan should have a tight-fitting lid, and be big enough to hold all the ingredients… this is a one-pan recipe.

Step 6When the foaming subsides, add the rice, and stir to combine with the oil and butter.

Step 7Continue to stir until the rice begins to turn translucent, about 3 – 5 minutes.

Step 8Add the onions and garlic, and stir for an additional 2 minutes.

Step 9Add the salt, cumin, oregano, black pepper, and stir to combine, about 30 seconds.

Step 10Add the tomatoes, and tomato paste.

Step 11Stir to combine, about 30 seconds.

Step 12Add the chicken stock, stir to combine, reduce the heat to medium low, cover, and allow to simmer for 20 minutes.

Step 13Take off the heat, and fluff with a fork or wooden spoon.

Step 15Before serving, cut the lime in half, and squeeze half over the warm rice, then cut the remaining half into wedges, and serve with the rice, garnish with chopped cilantro (if using). Enjoy.
