Ingredients
- 1 pound hot pork sausage
- 1 cup celery, chopped
- 1 cup onion, chopped
- 1 cup green bell pepper, chopped
- 1 cup rice, uncooked
- 1 can (14 oz) chicken broth
- salt & pepper, to taste
How To Make sausage and rice casserole

Step 1In a large skillet, brown the sausage and crumble. Remove sausage from pan to a 2 quart casserole dish. Drain and reserve the drippings.

Step 2Add about a tablespoon of the drippings to the skillet. Add the celery, onion, and bell pepper. Saute for two minutes, or until they start to soften. Pour into the baking dish with the sausage. Add the rice to the baking dish.

Step 3Pour the chicken broth into a 2 cup measuring cup. Add water to yield 2 cups total. Stir into the rice mixture. Season to taste with salt and pepper.

Step 4Cover tightly with foil and bake for 1 hour, until rice is done and liquid is absorbed.
