For me this was a good recipe to clean out my fridge. You can throw any leftover veggies or meat. The possibilities are endless with this one.

Ingredients
- 1 cup baby portebello mushrooms
- 1/2 cup onion
- 1/2 cup celery
- 1 package rice pilaf mix
- 2 cups beef broth
- 3 tablespoons coconut oil
- OPTIONAL: ANY MEAT/LEFTOVER
How To Make rustic rice

Step 1Cook rice as package specifies only use beef broth instead of water. Saute mushrooms, onion and celery in coconut oil and put to side until rice is done. Mix all ingredients together.

Step 2I also use this dish to use up my leftover meat in the fridge. I had some turkey sausage and left over brat to cut up and add to mine. Whatever meat you have will make this into a main dish.
