My husband and I actually came up with this salad after seeing a similar version online. He recently entered it in the Texas Rice Fesrival cooking contest. It won a first place medal and the reserve grand champion silver platter! Good job Rick!

Ingredients

  • 3 c
    cooked white rice, cooled
  • 5 slice
    bacon, cooked
  • 1 c
    shredded lettuce
  • 1 c
    grape tomatoes, halved
  • 2 Tbsp
    finely sliced green onion
  • 2 Tbsp
    mayonnaise (or miracle whip)
  • 2 Tbsp
    sour cream
  • 1/4 c
    ranch dressing
  • ·
    salt and pepper to taste

How to Make Rick's BLT Rice Salad

Step-by-Step

  1. In a medium bowl, combine rice; add bacon, lettuce, tomatoes and green onion.
  2. In a small bowl, combine mayonnaise, sour cream, Ranch dressing, salt and pepper to taste.
  3. Pour over rice mixture and gently stir to combine. Chill until serving time.
