rice dressing
I pulled this recipe from a family dish we made on holidays called, "Baked Hen with Oyster/Rice Dressing". The rice it made was so good I wanted to use it as a regular side dish for meat and fish. It uses chicken broth, butter and 5 aromatics to take an ordinary grain of rice to lofty taste levels.

Ingredients
- 2 cups long grain white rice, uncooked
- 4 cups chicken broth, use low sodium if desired, i use "better than bullion" chicken base to make my own.
- 1 small onion, finely diced
- 2 stalks celery, finely diced, i peel my celery with a potato peeler to eliminate the stringy part.
- 3 - green onions, finely diced
- 1/2 bunch parsley, finely diced
- 3 cloves garlic, minced
- 1 pinch salt/pepper
- 2 tablespoons butter
How To Make rice dressing

Step 1Melt butter in 3 qt saucepan and saute onion, celery and white part of green onions until soft. During saute throw in pinch of salt/pepper.

Step 2Add green onion tops, parsley and garlic, saute another minute.

Step 3Add chicken broth and rice, bring to a boil, cover, reduce heat to simmer and cook for 20 minutes. Fluff with fork. Enjoy!
