This is one of the best ways I know of to get kids to eat broccoli. When my kids were little, they would ask for this side dish at least once a week. It's ecomonical and goes with pretty much anything.

Ingredients
- 1 1/2 cups minute rice
- 1 1/2 cups water
- 1 package frozen chopped broccoli
- 1 can cream of mushroom soup, undiluted
- 1 jar cheese whiz or other processed cheese spread (small jar)
How To Make rice casserole

Step 1Cook rice and water as directed on package. Cook broccoli and drain well.

Step 2Mix cooked rice, broccoli, soup and cheese and place in a 9x13 glass baking dish sprayed with non-stick cooking spray. Bake 45 minutes, uncovered, at 375.

Step 3Almost any cream soup can be used in this. If using broccoli cheddar soup, simply reduce or omit Cheese Whiz.
