Looking through my old recipe cards I rediscovered an old standby that I used to make often when I lived in Baton Rouge. This is great served with grilled shrimp, boiled crawfish or any fish. It can be a meal by itself when you add some cooked crumbled sausage to it, which then makes is "Dirty Rice."

Ingredients

  • 1/3 lb
    chopped bacon (raw)
  • 1 clove
    garlic
  • 1/3 c
    green peppers chopped
  • 1/3 c
    celery, chopped
  • 1/2 c
    onions, chopped
  • 1 can(s)
    8oz tomato sauce
  • 1 c
    water
  • 1 1/2 tsp
    brown sugar
  • 1/4 tsp
    salt
  • 1 1/4 c
    uncooked rice

How to Make Red Rice Baton Rouge Style

Step-by-Step

  1. Saute bacon, onions, garlic, green peppers and celery until tender.
  2. Add tomato sauce, brown sugar and salt. Bring to a boil and add the rice
  3. Reduce heat, cover and simmer for 20 minutes.
