red rice baton rouge style
Looking through my old recipe cards I rediscovered an old standby that I used to make often when I lived in Baton Rouge. This is great served with grilled shrimp, boiled crawfish or any fish. It can be a meal by itself when you add some cooked crumbled sausage to it, which then makes is "Dirty Rice."

Ingredients
- 1/3 pound chopped bacon (raw)
- 1 clove garlic
- 1/3 cup green peppers chopped
- 1/3 cup celery, chopped
- 1/2 cup onions, chopped
- 1 can 8oz tomato sauce
- 1 cup water
- 1 1/2 teaspoons brown sugar
- 1/4 teaspoon salt
- 1 1/4 cups uncooked rice

Step 1Saute bacon, onions, garlic, green peppers and celery until tender.

Step 2Add tomato sauce, brown sugar and salt. Bring to a boil and add the rice

Step 3Reduce heat, cover and simmer for 20 minutes.
