red beans & rice
How can you go wrong? This is one of my favorite side dishes.

Ingredients
- 1 large onion, diced
- 4 - celery stalks, sliced
- 1/4 cup red bell pepper, diced
- 28 ounces crushed tomatoes
- 2 - 16 ounce cans of red beans
- 1/2 teaspoon cajun spice mix
- 1/2 teaspoon cilantro
- 3/4 teaspoon chili powder
- 2 teaspoons salt
How To Make red beans & rice

Step 1Grease non-stick stew pot with 2 teaspoons olive oil.

Step 2Saute onions, celery and red peppers.

Step 3Add crushed tomatoes and add spices.

Step 4Simmer for 15 minutes.

Step 5Add RINSED kidney beans.

Step 6Heat through.

Step 7Spoon over brown rice.
