  • 1 large
    onion, diced
  • 4
    celery stalks, sliced
  • 1/4 c
    red bell pepper, diced
  • 28 oz
    crushed tomatoes
  • 2
    16 ounce cans of red beans
  • 1/2 tsp
    cajun spice mix
  • 1/2 tsp
  • 3/4 tsp
    chili powder
  • 2 tsp

How to Make Red Beans & Rice


  1. Grease non-stick stew pot with 2 teaspoons olive oil.
  2. Saute onions, celery and red peppers.
  3. Add crushed tomatoes and add spices.
  4. Simmer for 15 minutes.
  5. Add RINSED kidney beans.
  6. Heat through.
  7. Spoon over brown rice.
