I have made this several times and its always a hit. I don't always have currants and I don't miss them in the final dish. The directions are for stove top but I like it better in a rice cooker. I serve this with lemon chicken and a salad. Enjoy!

  • 3 c
  • 1 1/2 c
    white rice
  • 2 Tbsp
  • 1/4 c
    golden raisins
  • 2 Tbsp
  • 1 tsp
    lemon zest
  • 1 tsp
    cumin seeds
  • 1 tsp
    chopped chives
  • 3 oz
    toasted sliced almonds

How to Make Rachael Rays Special Rice.


  1. Bring water to a boil.
  2. Add butter, rice, cumin, lemon zest, raisins, currants.
  3. Bring back to a full boil. Cover and reduce heat to a simmer. Simmer for 20 minutes.
  4. Remove from heat and add chives. Fluff with fork. Put on serving platter. Sprinkle with almonds. Serve and enjoy.
