I have made this several times and its always a hit. I don't always have currants and I don't miss them in the final dish. The directions are for stove top but I like it better in a rice cooker. I serve this with lemon chicken and a salad. Enjoy!

Ingredients
- 3 cups water
- 1 1/2 cups white rice
- 2 tablespoons butter
- 1/4 cup golden raisins
- 2 tablespoons currants
- 1 teaspoon lemon zest
- 1 teaspoon cumin seeds
- 1 teaspoon chopped chives
- 3 ounces toasted sliced almonds

Step 1Bring water to a boil.

Step 2Add butter, rice, cumin, lemon zest, raisins, currants.

Step 3Bring back to a full boil. Cover and reduce heat to a simmer. Simmer for 20 minutes.

Step 4Remove from heat and add chives. Fluff with fork. Put on serving platter. Sprinkle with almonds. Serve and enjoy.
