I have made this several times and its always a hit. I don't always have currants and I don't miss them in the final dish. The directions are for stove top but I like it better in a rice cooker. I serve this with lemon chicken and a salad. Enjoy!

Ingredients

  • 3 cups water
  • 1 1/2 cups white rice
  • 2 tablespoons butter
  • 1/4 cup golden raisins
  • 2 tablespoons currants
  • 1 teaspoon lemon zest
  • 1 teaspoon cumin seeds
  • 1 teaspoon chopped chives
  • 3 ounces toasted sliced almonds

How To Make rachael rays special rice.

  • Step 1
    Bring water to a boil.
  • Step 2
    Add butter, rice, cumin, lemon zest, raisins, currants.
  • Step 3
    Bring back to a full boil. Cover and reduce heat to a simmer. Simmer for 20 minutes.
  • Step 4
    Remove from heat and add chives. Fluff with fork. Put on serving platter. Sprinkle with almonds. Serve and enjoy.
