I'm not much of a fan of the rice with tomato sauce or heavily spiced, I like this plain Mexican rice much better.

Ingredients

  • 1 tablespoon canola oil
  • 1 tablespoon bacon grease
  • 1/4 cup very finely diced onion
  • 2 cloves garlic, minced
  • 1 cup white long grain rice
  • 2 cups chicken broth
  • 2 tablespoons chopped fresh parsley or cilantro
  • salt & pepper to taste

How To Make seasoned white rice

  • Step 1
    Heat oil and bacon grease in a medium skillet over medium high heat.
  • Step 2
    Add onion and start to cook until softened.
  • Step 3
    Add the rice and cook until browned.
  • Step 4
    Add the garlic and cook for 30 second more.
  • Step 5
    Pour in the chicken broth. Cover tightly and lower heat low/simmer.
  • Step 6
    Cooke rice covered for 25 minutes. Remove from heat. Let rice rest for 5 minutes with lid on.
  • Step 7
    Sprinkle with parsley or cilantro and fluff with a fork.
