Ingredients
- 1 cup instant brown rice
- 1 cup water
- 1 tablespoon coconut oil
- 1/4 cup red onion, chopped
- 1/4 cup orange pepper (or any color0
- 1/2 cup fresh pineapple, chopped
- 1- 2 tablespoons garlic chili sauce
- 1/4 teaspoon garlic granules
- 1 cup frozen corn
- 2 tablespoons cilantro, with stems, minced
- 1-2 teaspoon soy sauce
- 1 teaspoon lemon juice
- 2 tablespoons pistachio nuts, chopped (optional)
How To Make pineapple brown rice

Step 1Make brown rice according to package directions. Let cool while making the rest of the dish.

Step 2In a skillet, heat coconut oil. Add chopped onion and orange pepper. Saute until veggies start to turn translucent, then add pineapple. Keep cooking for until pineapple starts to brown a bit. Stir in chili garlic sauce and garlic granules. Add frozen corn and stir together until corn is warm.

Step 3Push veggies/pineapple to sides of pan and add rice in center. Stir together until everything is well blended. Add cilantro, soy sauce and cook for another couple minutes. Squirt on some lemon juice before serving and sprinkle with optional nuts.
