pine nut and orange wild rice

Adding a few extra ingredients takes a box of long grain and wild rice to a different level. I like this as a side to pork or fish.

Ingredients

  • 1 cup golden raisins
  • 6 ounces package long-grain and wild rice
  • 1/2 cup pine nuts, toasted
  • 2 tablespoons fresh parsley, chopped
  • 2-4 tablespoons olive oil
  • 2 tablespoons orange zest
  • 2 tablespoons orange juice
  • 1/4 teaspoon ground black pepper
  • freshly grated parmesan cheese
  • 1/2 cup water

How To Make pine nut and orange wild rice

  • Step 1
    Combine the raisins and 1/2 cup water in a small saucepan. Brink to a boil; cover, reduce heat, and simmer for 3 minutes. Remove from the heat and let cool. Drain and set aside.
  • Step 2
    Cook the rice according to the package directions.
  • Step 3
    Combine the rice, reserved raisins, pine nuts, and the next 5 ingredients in a medium bowl. Stir well. Sprinkle with Parmesan cheese and serve.
