pine nut and orange wild rice

Ingredients
- 1 cup golden raisins
- 6 ounces package long-grain and wild rice
- 1/2 cup pine nuts, toasted
- 2 tablespoons fresh parsley, chopped
- 2-4 tablespoons olive oil
- 2 tablespoons orange zest
- 2 tablespoons orange juice
- 1/4 teaspoon ground black pepper
- freshly grated parmesan cheese
- 1/2 cup water
How To Make pine nut and orange wild rice

Step 1Combine the raisins and 1/2 cup water in a small saucepan. Brink to a boil; cover, reduce heat, and simmer for 3 minutes. Remove from the heat and let cool. Drain and set aside.

Step 2Cook the rice according to the package directions.

Step 3Combine the rice, reserved raisins, pine nuts, and the next 5 ingredients in a medium bowl. Stir well. Sprinkle with Parmesan cheese and serve.
