Ingredients
- 1 tablespoon ghee
- 1 tablespoon canola oil
- 1 cup finely chopped white onions
- 1/2 teaspoon ground Himalayan pink salt
- 1 small clove garlic, pressed
- 1 cinnamon stick
- 5 cardamom pods
- 4 whole cloves
- 1 teaspoon cumin seeds
- 1 1/2 teaspoons ground turmeric
- 1 1/2 cups basmati rice, rinsed thoroughly and drained
- 3 cups low-sodium vegetable broth
- 1/2 teaspoon freshly ground black pepper (I always use mixed peppercorns)
- 2 large bay leaves
How To Make pilau rice

Step 1In a medium saucepan over medium heat, add the ghee and oil. When hot and melted, add the onions and season with salt. Sauté for 5 minutes or until softened.

Step 2Add the pressed garlic and sauté for 30 seconds.

Step 3Add the cinnamon stick, cardamom pods, whole cloves, and cumin seeds. Stir the ingredients continuously for 2 minutes. Add the turmeric and stir to coat.

Step 4Add the rice and mix well until coated.

Step 5Pour in the broth, add freshly ground black pepper and bay leaves; stir.

Step 6Increase heat to high and bring to a boil. Cover, reduce heat to low, and cook for 15 - 16 minutes.

Step 7When time is up, turn off the heat and let it sit for 10 minutes, covered.

Step 8Uncover, remove cinnamon stick, cardamom pods, cloves, and bay leaves with tongs; discard.

Step 9Using a fork, fluff the rice and serve immediately.
