It smells awesome, looks absolutely delicious, and tastes incredible! This is a delectable change from ordinary rice.

Ingredients

  • 1 tablespoon ghee
  • 1 tablespoon canola oil
  • 1 cup finely chopped white onions
  • 1/2 teaspoon ground Himalayan pink salt
  • 1 small clove garlic, pressed
  • 1 cinnamon stick
  • 5 cardamom pods
  • 4 whole cloves
  • 1 teaspoon cumin seeds
  • 1 1/2 teaspoons ground turmeric
  • 1 1/2 cups basmati rice, rinsed thoroughly and drained
  • 3 cups low-sodium vegetable broth
  • 1/2 teaspoon freshly ground black pepper (I always use mixed peppercorns)
  • 2 large bay leaves

How To Make pilau rice

  • Step 1
    In a medium saucepan over medium heat, add the ghee and oil. When hot and melted, add the onions and season with salt. Sauté for 5 minutes or until softened.
  • Step 2
    Add the pressed garlic and sauté for 30 seconds.
  • Step 3
    Add the cinnamon stick, cardamom pods, whole cloves, and cumin seeds. Stir the ingredients continuously for 2 minutes. Add the turmeric and stir to coat.
  • Step 4
    Add the rice and mix well until coated.
  • Step 5
    Pour in the broth, add freshly ground black pepper and bay leaves; stir.
  • Step 6
    Increase heat to high and bring to a boil. Cover, reduce heat to low, and cook for 15 - 16 minutes.
  • Step 7
    When time is up, turn off the heat and let it sit for 10 minutes, covered.
  • Step 8
    Uncover, remove cinnamon stick, cardamom pods, cloves, and bay leaves with tongs; discard.
  • Step 9
    Using a fork, fluff the rice and serve immediately.
