PERFECT Coconut Rice



This dish is delicious on it's own or as the perfect side dish to seafood or chicken. Not overly sweet, just PERFECT.

salted butter
1 Tbsp
light brown sugar
1/2 tsp
2 c
jasmine rice (or basmati - i prefer jasmine)
1 1/2 c
coconut milk
1 1/2 c

How to Make PERFECT Coconut Rice


  • 1melt butter over medium heat in medium sized sauce pan
  • 2add brown sugar and salt until completely dissolved
  • 3turn heat to high and add rice, quickly stirring until coated
  • 4stir in water and coconut milk
  • 5when it boils,turn heat down to med. low and cover with a lid. simmer for 20 min.
  • 6remove from heat and let sit another 10 min. with lid on. DO NOT REMOVE LID!
  • 7after 10 min., remove lid and fluff with fork.
