perfect coconut rice
This dish is delicious on it's own or as the perfect side dish to seafood or chicken. Not overly sweet, just PERFECT.

Ingredients
- 1 tablespoon salted butter
- 1 tablespoon light brown sugar
- 1/2 teaspoon salt
- 2 cups jasmine rice (or basmati - i prefer jasmine)
- 1 1/2 cups coconut milk
- 1 1/2 cups water
How To Make perfect coconut rice

Step 1melt butter over medium heat in medium sized sauce pan

Step 2add brown sugar and salt until completely dissolved

Step 3turn heat to high and add rice, quickly stirring until coated

Step 4stir in water and coconut milk

Step 5when it boils,turn heat down to med. low and cover with a lid. simmer for 20 min.

Step 6remove from heat and let sit another 10 min. with lid on. DO NOT REMOVE LID!

Step 7after 10 min., remove lid and fluff with fork.
