Simple rice dish that really takes no longer than it takes to cook the rice.

  • 1/4 c
    onion, chopped
  • 2 Tbsp
    fresh parsley, chopped
  • 1/4 c
    butter, melted
  • 1 c
    long-grain rice, uncooked
  • 2 c
  • 10 oz
    frozen english peas
  • 1 tsp
  • 1/4 c
    parmesan cheese, grated

How to Make Peas and Rice Casserole


  1. Saute onion and parsley in melted butter in a large skillet until tender. Add the rice, and saute 5 minutes, stirring frequently. Add the water; bring to a boil. Cover, reduce heat, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  2. Cook the peas according to the package directions; drain. Add peas and salt to the rice; stir well.
  3. Transfer the rice mixture to a serving dish; sprinkle with Parmesan cheese.
