Ingredients

onin, finely chopped
2 Tbsp
butter
3/4 c
long grain rice, uncooked
1/4 tsp
thyme
1/8 tsp
pepper
2 c
chicken broth
1 c
peas, frozen
1/2 c
red pepper, diced
1/3 c
parmesan cheese, shredded
1/4 c
white wine
additional parmesan for topping

How to Make Pea and Sweet Pepper Rice

Step-by-Step

  • 1Sauté onion in butter until tender.
  • 2Add rice, cook and stir over medium heat until rice is light brown
  • 3Add wine, thyme and pepper. Cook, stirring constantly for 2 minutes.
  • 4Add broth, bring to boil, reduce heat. Simmer covered 15 minutes.
  • 5Add peas and sweet pepper. Stir until heated through.
  • 6Remove from heat, stir in the 1/3 cup parmesan cheese.
  • 7Serve with additional cheese.
