Ingredients
- 1/4 cup onin, finely chopped
- 2 tablespoons butter
- 3/4 cup long grain rice, uncooked
- 1/4 teaspoon thyme
- 1/8 teaspoon pepper
- 2 cups chicken broth
- 1 cup peas, frozen
- 1/2 cup red pepper, diced
- 1/3 cup parmesan cheese, shredded
- 1/4 cup white wine
- - additional parmesan for topping
How To Make pea and sweet pepper rice

Step 1Sauté onion in butter until tender.

Step 2Add rice, cook and stir over medium heat until rice is light brown

Step 3Add wine, thyme and pepper. Cook, stirring constantly for 2 minutes.

Step 4Add broth, bring to boil, reduce heat. Simmer covered 15 minutes.

Step 5Add peas and sweet pepper. Stir until heated through.

Step 6Remove from heat, stir in the 1/3 cup parmesan cheese.

Step 7Serve with additional cheese.
