parmesan risotto
This is a super easy recipe and very tasty. My family loved it with Bang Bang Salmon. You could even add broccoli or mushrooms.

Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil, light
- 3/4 cup aboria rice
- 2 cups chicken broth low sodium
- 3\4 cups parmesan cheese, shredded
How To Make parmesan risotto

Step 1Heat oil and butter until melted over medium heat. Add rice and completely cover and cook until translucent, about 2 minutes.

Step 2Heat chicken broth. Add about a cup to rice. Stir constantly stirring until broth is gone, then add remaining cup and do the same.

Step 3Once all liquid is gone, turn off heat and add Parmesan. Stir and serve.
