This is a super easy recipe and very tasty. My family loved it with Bang Bang Salmon. You could even add broccoli or mushrooms.

Ingredients For parmesan risotto

  • 1 Tbsp
    butter
  • 1 Tbsp
    olive oil, light
  • 3/4 c
    aboria rice
  • 2 c
    chicken broth low sodium
  • 3\4 c
    parmesan cheese, shredded

How To Make parmesan risotto

  • 1
    Heat oil and butter until melted over medium heat. Add rice and completely cover and cook until translucent, about 2 minutes.

    Heat chicken broth. Add about a cup to rice. Stir constantly stirring until broth is gone, then add remaining cup and do the same.

    Once all liquid is gone, turn off heat and add Parmesan. Stir and serve.
