Oven Baked Mexican Rice

I serve this with burritos or any kind of mexican casserole.

2 Tbsp
butter or olive oil
onion, chopped
1 1/2 c
long cooking rice, uncooked
1 tsp
garlic, minced
2 c
chicken broth
1 1/4 c
tomato juice


1Heat butter or oil in a skilled over medium heat. Add onion; cook until translucent. Add rice and garlic. Cook and stir until rice is lightly golden. Stir in remaining ingredients; bring to a boil. Transfer mixture into a greased 2 qt casserole dish. Cover and bake 350 degrees for 25 minutes, or until rice is tender. Makes 4-6 servings.
