- 2 tablespoons butter or olive oil
- 1 - onion, chopped
- 1 1/2 cups long cooking rice, uncooked
- 1 teaspoon garlic, minced
- 2 cups chicken broth
- 1 1/4 cups tomato juice
How To Make oven baked mexican rice

Step 1Heat butter or oil in a skilled over medium heat. Add onion; cook until translucent. Add rice and garlic. Cook and stir until rice is lightly golden. Stir in remaining ingredients; bring to a boil. Transfer mixture into a greased 2 qt casserole dish. Cover and bake 350 degrees for 25 minutes, or until rice is tender. Makes 4-6 servings.
