our family's favorite chinese fried rice
I've been making this fried recipe for years and have changed it from the original until the ultimate (according to my family) was achieved.

Ingredients
- 4 tablespoons soy sauce, low sodium preferred
- 3-4 tablespoons oyster sauce
- 2-3 teaspoons sesame oil
- 1 tablespoon Shaoxing wine (sherry wine is a good substitute)
- 1-2 teaspoon sugar
- 1/4 teaspoon salt (optional)
- black or white ground pepper, to taste
- RICE
- 5 cups cooked rice (at room temperature, preferably leftover)
- 1 cup peas (fresh or frozen)
- 2 cups water
- 6 large eggs
- 4 1/2 tablespoons oil, divided
- 1/2 teaspoon salt
- 1 pinch white or black pepper, to taste
- 1-2 tablespoon garlic, minced
- 1/2 - 3/4 cups onion, chopped
- 1/2 - 1 cups scallions

Step 1NOTE: Prepare and measure all the ingredients ahead of time to ensure smooth timing when cooking this recipe.

Step 2PREPARE THE SAUCE: Place the soy sauce, oyster sauce, sesame oil, Shaoxing wine, sugar, salt, and pepper in a small bowl and set aside.

Step 3Place the cooked rice in a separate bowl, breaking up any lumps. Set aside.

Step 4If using frozen peas, thaw them and drain. Set aside. If using fresh peas, cook them in boiling water over high heat for approximately 1 - 2 minutes. Set aside.

Step 5Beat the eggs with 1 tablespoon of oil, 1/4 teaspoon salt, and pepper of choice (white or black) in a small bowl. Set aside.

Step 6Place a wok over high heat and add 2 tablespoons of oil, and carefully coat the insides of the wok with the oil with a spatula. When heated, add the eggs and scramble for about 1-2 minutes with a spatula until medium-firm. Transfer to a plate and cut the eggs into smallish pieces to your desired size. Set aside.

Step 7If your wok has egg stuck to it, clean it out and dry it off. Heat the wok again over high heat for 1/2 a minute or so. Add the remaining oil and carefully coat the wok again with your spatula.

Step 8Add the ginger and, stirring briefly, add the garlic. Be careful not to burn either of these ingredients.

Step 9Add the onions and 1/4 teaspoon salt (if using). Lower to medium heat or until the onions are translucent, but not over-cooked.

Step 10Add the peas, raising the heat to high and stir-fry for approximately 2 minutes.

Step 11Add the rice, stirring to mix and cook until the rice is very hot.

Step 12Drizzle in the sauce and lift and stir with the spatula until the rice is evenly coated with the sauce.

Step 13Add the eggs and stir to distribute evenly. Taste for seasoning and adjust, if necessary.

Step 14Turn off the heat; add the scallions and mix them in, distributing evenly. Serve and enjoy.
