mushrooms and wild rice

When we lived in northern Wisconsin, we had easy access to wild rice. I still have some and thought I'd try this combo of ingredients. We like wild rice with chicken dishes.

Ingredients

  • 1/2 cup wild rice, uncooked
  • 1 cup chicken broth
  • 1/2 cup onions, chopped
  • 1 clove garlic
  • 8 ounces sliced portabello mushrooms (mini-bellas)
  • 1/2 cup roasted red pepper, cut into strips
  • 1 tablespoon fresh parsley, minced
  • 1 teaspoon dijon mustard - whole grain or regular
  • - salt and pepper, to taste
  • - sesame seeds, for garnish

How To Make mushrooms and wild rice

  • Step 1
    Rinse and drain wild rice. Bring to boil in the chicken broth and simmer, covered, until liquid is absorbed. About 1/2 hour.
  • Step 2
    When rice is almost done, heat olive oil in skillet, sauté onion until starting to turn translucent. Add garlic and mushrooms. Continue to sauté until mushrooms have released liquid.
  • Step 3
    Add red pepper strips, wild rice, seasonings. Stir together until hot. Stir in parsley. Sprinkle sesame seeds on top of each serving.
