mushrooms and wild rice
When we lived in northern Wisconsin, we had easy access to wild rice. I still have some and thought I'd try this combo of ingredients. We like wild rice with chicken dishes.

Ingredients
- 1/2 cup wild rice, uncooked
- 1 cup chicken broth
- 1/2 cup onions, chopped
- 1 clove garlic
- 8 ounces sliced portabello mushrooms (mini-bellas)
- 1/2 cup roasted red pepper, cut into strips
- 1 tablespoon fresh parsley, minced
- 1 teaspoon dijon mustard - whole grain or regular
- - salt and pepper, to taste
- - sesame seeds, for garnish
How To Make mushrooms and wild rice

Step 1Rinse and drain wild rice. Bring to boil in the chicken broth and simmer, covered, until liquid is absorbed. About 1/2 hour.

Step 2When rice is almost done, heat olive oil in skillet, sauté onion until starting to turn translucent. Add garlic and mushrooms. Continue to sauté until mushrooms have released liquid.

Step 3Add red pepper strips, wild rice, seasonings. Stir together until hot. Stir in parsley. Sprinkle sesame seeds on top of each serving.
