This is an old recipe of my Mom's, passed along to me.

Ingredients

  • 8 slices bacon
  • 1/2 cup celery
  • 3/4 pound sliced mushrooms
  • 1 1/2 cups boiling water
  • 1 package dry onion soup mix
  • 1 cup canned tomatoes, mashed up
  • 1 1/3 cups instant rice
  • 1 cup grated sharp cheddar

How To Make mom's california rice

  • Step 1
    Fry bacon until crisp. Crumble and set aside. In same pan, using bacon drippings, add celery and mushrooms. Fry until tender.
  • Step 2
    In a separate bowl, stir together the boiling water, tomatoes, soup mix, rice and 1/4 cup of cheese. Add celery and mushroom mixture as well as the crumbled bacon. Mix it all together and put in a 2 quart baking dish.
  • Step 3
    Cover with remaining cheese and bake at 375 F for 30 minutes or until rice is tender.
