Ingredients
- 8 slices bacon
- 1/2 cup celery
- 3/4 pound sliced mushrooms
- 1 1/2 cups boiling water
- 1 package dry onion soup mix
- 1 cup canned tomatoes, mashed up
- 1 1/3 cups instant rice
- 1 cup grated sharp cheddar
How To Make mom's california rice

Step 1Fry bacon until crisp. Crumble and set aside. In same pan, using bacon drippings, add celery and mushrooms. Fry until tender.

Step 2In a separate bowl, stir together the boiling water, tomatoes, soup mix, rice and 1/4 cup of cheese. Add celery and mushroom mixture as well as the crumbled bacon. Mix it all together and put in a 2 quart baking dish.

Step 3Cover with remaining cheese and bake at 375 F for 30 minutes or until rice is tender.
