middle eastern rice pilaf
Found this recipe in an old cookbook of mine, and I have modified it a little for our preference. Love the ingredients in this dish.

Ingredients
- 2 cups long grain rice, uncooked
- 1 small onion, chopped
- 1/2 teaspoon ground turmeric, or more
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 2 Roma tomatoes, chopped
- 1 cup frozen peas, thawed
- 1/2 cup golden raisins
- 1 cup pistachios, chopped (could use almonds)
- 3 cups chicken stock (or vegetable if you wish)
- 1 - 2 tablespoons butter or olive oil
- salt and pepper, to taste
- minced garlic, if desired
How To Make middle eastern rice pilaf

Step 1Using a deep baking dish or pan, combine all ingredients along with salt and pepper to taste.

Step 2Cover the dish with aluminum foil and bake at 330 - 350 degrees F for 45 minutes or until the liquid is absorbed.

Step 3Uncover casserole dish and serve warm.
