Found this recipe in an old cookbook of mine, and I have modified it a little for our preference. Love the ingredients in this dish.

Ingredients

  • 2 cups long grain rice, uncooked
  • 1 small onion, chopped
  • 1/2 teaspoon ground turmeric, or more
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 Roma tomatoes, chopped
  • 1 cup frozen peas, thawed
  • 1/2 cup golden raisins
  • 1 cup pistachios, chopped (could use almonds)
  • 3 cups chicken stock (or vegetable if you wish)
  • 1 - 2 tablespoons butter or olive oil
  • salt and pepper, to taste
  • minced garlic, if desired

How To Make middle eastern rice pilaf

  • Step 1
    Using a deep baking dish or pan, combine all ingredients along with salt and pepper to taste.
  • Step 2
    Cover the dish with aluminum foil and bake at 330 - 350 degrees F for 45 minutes or until the liquid is absorbed.
  • Step 3
    Uncover casserole dish and serve warm.
