We have monthly birthday parties with my husband's Serbian/German family members. There are a lot of us and it somewhat resembles the My Big Fat Greek Wedding when we are together! Food is shared and enjoyed by all! This month we are having a Mexican Fiesta with fried taco's and this fabulous Mexican Rice recipe from my mother in law.

Ingredients
- 3 cups diced onions
- 3 cloves garlic, diced
- 3/4 cup margarine
- 2 cans tomato soup
- 6 cups boiling water
- 2 cups long grain rice, uncooked
- - salt and pepper to taste
How To Make mexican rice

Step 1Cover 2 cups of rice with water to soak. In a frying pan, saute the diced onions and garlic in margarine. Drain water off of rice. Remove onions and garlic from frying pan. Add rice and cook until lightly browned. Add 4 cups of boiling water and the onions and garlic. Bring to boil. Continue to boil until water is almost gone. Turn heat down and add 2 cups of boiling water and the 2 cans of tomato soup. Stir well until blended. Bring to boil, reduce heat. Simmer stirring occasionally until thickened. Add salt and pepper to taste.
