A hearty, flavorful, and easy dish that's a great side, and is even hearty enough to be a main dish, especially when topped with grated cheese! This recipe reheats wonderfully, which is good since it makes a lot! I got it from the blog Whole Eats and Whole Treats

Ingredients
- 1 cup brown rice
- 2 tablespoons oil
- 1 - small onion, chopped
- 3 cans garlic, minced
- 1 - red bell pepper, chopped
- 1 cup corn
- 2 cans black beans, drained and rinsed
- 1/2 teaspoon salt
How To Make mexican rice skillet

Step 1While the rice is cooking, heat the oil. Add all of the vegetables and the salt and cook through.

Step 2When the rice is done, stir it in with the other ingredients. Serve with grated cheese melted on top.
