A hearty, flavorful, and easy dish that's a great side, and is even hearty enough to be a main dish, especially when topped with grated cheese! This recipe reheats wonderfully, which is good since it makes a lot! I got it from the blog Whole Eats and Whole Treats

Ingredients

  • 1 cup brown rice
  • 2 tablespoons oil
  • 1 - small onion, chopped
  • 3 cans garlic, minced
  • 1 - red bell pepper, chopped
  • 1 cup corn
  • 2 cans black beans, drained and rinsed
  • 1/2 teaspoon salt

How To Make mexican rice skillet

  • Step 1
    While the rice is cooking, heat the oil. Add all of the vegetables and the salt and cook through.
  • Step 2
    When the rice is done, stir it in with the other ingredients. Serve with grated cheese melted on top.
