This is one of my moms old recipes from Family Circle. She always tried to get my dad to try new foods. Some he'd try, some, not so much. We kids loved this, dad not so much, ha!

Ingredients
- 1/2 cup onion, chopped
- 1 clove garlic, minced
- 2 teaspoons vegetable oil
- 1 cup rice, uncooked
- 2 medium tomatoes, peeled,seeded and chopped
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 can condensed beef broth
- 1/2 cup water
How To Make mexican rice - family circle 1972

Step 1In a large skillet, saute onions and garlic on med. heat, in oil till softened, about 5-7 minutes.

Step 2Add rice and cook over med. heat stirring constantly until mix has become golden brown.

Step 3Add tomatoes, chili powder, salt, broth and water. Bring to a boil, cover and reduce heat to low. Simmer covered up to 45 minutes or until all liquid is absorbed.
