I lost my husband in Jan. after a long battle with cancer. This dish was brought to my home the day of the funeral. My family enjoyed it so much, I requested the recipe from my friend.

Ingredients

  • 1 cup cook rice and set aside
  • 1 med - onion,chopped
  • 1 med - green bell pepper, chopped
  • 1 or 2 - jalapeno peppers, chopped
  • 1/2 stick butter, melted
  • 1 teaspoon sugar
  • 2- 17 ounces cream style corn
  • 1 cup mild cheddar cheese, grated

How To Make mexican rice

  • Step 1
    Saute onions and peppers in butter. Add sugar. Add rice, veggies and corn. Mix well and spoon into lightly greased casserole dish. Sprinkle with cheese. Bake @ 350 for 40-45 minutes or until cheese melts.
