This Mexican Rice is made every time I make a mexican dish and there is never any left if I serve it to friends and family.

Ingredients

  • 2 cups cooked rice ( i cup of uncooked rice equals 2 of cooked)
  • 1 can cream of mushroom or cream of chicken
  • 8 ounces sour cream
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder or salt
  • 1 can chopped green chilies (small can)
  • 1 cup each of shredded mozz. & cheddar cheese or the mexican cheese blend

How To Make mexican rice

  • Step 1
    Cook the rice in 2 cups of water let cook until most of the water is boiled out. I usually add a little water as it cooks I like sticky rice. I also add about 1 tablespoon of butter as it cooks. After the rice is done stir all ingredients in the pot and then spread in a 9x13" glass dish and srpinkle with cheese. I also Add a little salt and pepper to the mixture. Bake on 350 degrees for 30 minutes
