I make this weekly to go along with our taco nights :)

Ingredients

  • 1 cup long white rice
  • 1 cup water
  • 1 cup tomato sauce
  • 3 cloves garlic
  • 1/2 medium onlion
  • 1 tablespoon chicken bouillon
  • 2 tablespoons vegetable oil

How To Make mexican rice

  • Step 1
    Heat oil in a large skillet or pan.
  • Step 2
    Slice onion, mince garlic, and sautee in pan for about 5 min then add rice and let brown a little.
  • Step 3
    Once browned add tomato sauce, water, boullion and bring to a boil for another 5 minutes.
  • Step 4
    Cover, turn on Low, and let simmer for 40-45 minutes or until the rice is soft then just fluff it w/ a fork and it's ready to serve!
