A Mexican rice without the tomatoes!

Ingredients

1 c
chopped onion
1/4 c
butter, melted
4 c
cooked long-grain rice
`12 oz
carton small-curd cottage cheese
1 large
bay leaf, crushed
1/2 tsp
salt
1/8 tsp
pepper
2 can(s)
chopped green chiles, drained (4 ounces each)
2 c
sharp cheddar cheese, shredded (8 ounces)
fresh parsley, chopped

Step-By-Step

1Saute onion in butter in a skillet 3 minutes or until tender. Combine sauteed onion, rice, and the next 4 ingredients. Mix well.
2Layer rice mixture and chiles in an 11 x 7 x 1 1/2 inch dish; sprinkle with cheese and parsley.
3Bake, uncovered, at 375° for 25 minutes or until the cheese melts.
