Ingredients
- 1 cup chopped onion
- 1/4 cup butter, melted
- 4 cups cooked long-grain rice
- `12 ounce carton small-curd cottage cheese
- 1 large bay leaf, crushed
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cans chopped green chiles, drained (4 ounces each)
- 2 cups sharp cheddar cheese, shredded (8 ounces)
- - fresh parsley, chopped
How To Make mexican rice

Step 1Saute onion in butter in a skillet 3 minutes or until tender. Combine sauteed onion, rice, and the next 4 ingredients. Mix well.

Step 2Layer rice mixture and chiles in an 11 x 7 x 1 1/2 inch dish; sprinkle with cheese and parsley.

Step 3Bake, uncovered, at 375° for 25 minutes or until the cheese melts.
