Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 - onion, chopped
- 1 cup of rice
- 2 cloves garlic, chopped
- 1 can green chiles
- 1 tablespoon tomato paste
- 1 can tomatoes, diced
- 2 cups chicken broth
- - salt and pepper
How To Make mexican rice

Step 1Heat oil and butter in a large skillet. Add onions and rice.

Step 2Fry rice until light brown.

Step 3Add garlic and chiles and cook for 30 seconds.

Step 4Pour rice in a pot and add the rest of the ingredients. Bring to a boil, cover pot and turn the temperature down to low. Cook for 25 min.

Step 5Fluff and season rice with salt and pepper before serving.
