Ingredients

  • ·
    1 medium onion, chopped
  • ·
    1 clove garlic, minced
  • ·
    2 tsp. oil
  • ·
    1 cup regular rice
  • ·
    2 tomatoes, chopped and peeled
  • ·
    1 tsp. chili powder
  • ·
    1 tsp. salt
  • ·
    1 can condensed beef bouillon
  • ·
    1/2 cup water

How to Make Mexican Rice

Step-by-Step

  1. Sauté onion and garlic in oil til soft in large skillet about 5 minutes.
  2. Add rice and cook over high heat, stirring constantly til mixture turns golden brown. Add tomatoes, chili powder, salt, bouillon and water.
  3. . Bring to boil. Lower heat. Simmer covered 20 minutes or til all liquid has been absorbed. Serves 6
