Ingredients

  • - 1 medium onion, chopped
  • - 1 clove garlic, minced
  • - 2 tsp. oil
  • - 1 cup regular rice
  • - 2 tomatoes, chopped and peeled
  • - 1 tsp. chili powder
  • - 1 tsp. salt
  • - 1 can condensed beef bouillon
  • - 1/2 cup water

How To Make mexican rice

  • Step 1
    Sauté onion and garlic in oil til soft in large skillet about 5 minutes.
  • Step 2
    Add rice and cook over high heat, stirring constantly til mixture turns golden brown. Add tomatoes, chili powder, salt, bouillon and water.
  • Step 3
    . Bring to boil. Lower heat. Simmer covered 20 minutes or til all liquid has been absorbed. Serves 6 My Old Recipes
