I like this rice with blackened fish or chicken. Goes well with grilled foods as well.

  • 2 Tbsp
    onion, chopped
  • 2 Tbsp
    butter, melted
  • 1/2 c
    long-grain rice, uncooked
  • 1 c
    chicken broth
  • 1 c
    fresh mango, chopped
  • 1/8 tsp
    ground nutmeg
  • ·
    salt, to taste
  • ·
    pepper, to taste

How to Make Mango Rice


  1. Saute the onion in butter in a medium saucepan over medium until tender.
  2. Stir in rice; stir well. Stir in broth; bring to a boil. Cover and reduce heat. Let simmer 18 to 20 minutes until rice is tender and liquid is absorbed.
  3. Stir in mango, nutmeg, and salt and pepper. Serve immediately.
