I like this rice with blackened fish or chicken. Goes well with grilled foods as well.

Ingredients

  • 2 tablespoons onion, chopped
  • 2 tablespoons butter, melted
  • 1/2 cup long-grain rice, uncooked
  • 1 cup chicken broth
  • 1 cup fresh mango, chopped
  • 1/8 teaspoon ground nutmeg
  • - salt, to taste
  • - pepper, to taste

How To Make mango rice

  • Step 1
    Saute the onion in butter in a medium saucepan over medium until tender.
  • Step 2
    Stir in rice; stir well. Stir in broth; bring to a boil. Cover and reduce heat. Let simmer 18 to 20 minutes until rice is tender and liquid is absorbed.
  • Step 3
    Stir in mango, nutmeg, and salt and pepper. Serve immediately.
