Ingredients

  • 15.5 oz. can(s)
    bush's seasoned black beans
  • 2 c
    shredded sharp cheddar cheese
  • 2 c
    cooked white rice
  • 4 pinch
    fresh or dried cilantro
  • 2 tsp
    cooking oil

How to Make Maddy's Black Beans and Rice with Cheese

Step-by-Step

  1. Preheat oven to 350 degrees. Cook the white rice, following package directions.
  2. Lightly coat a small baking dish with the oil.
  3. Spread the rice over the bottom of the baking dish evenly.
  4. Spread the canned beans (do not drain) evenly over the rice.
  5. Cover the beans evenly with the shredded cheddar cheese.
  6. Bake until the cheese on top is melted. Remove from oven and sprinkle with chopped fresh or dried cilantro.
