Ingredients

  • 15.5 oz. cans bush's seasoned black beans
  • 2 cups shredded sharp cheddar cheese
  • 2 cups cooked white rice
  • 4 pinches fresh or dried cilantro
  • 2 teaspoons cooking oil

How To Make maddy's black beans and rice with cheese

  • Step 1
    Preheat oven to 350 degrees. Cook the white rice, following package directions.
  • Step 2
    Lightly coat a small baking dish with the oil.
  • Step 3
    Spread the rice over the bottom of the baking dish evenly.
  • Step 4
    Spread the canned beans (do not drain) evenly over the rice.
  • Step 5
    Cover the beans evenly with the shredded cheddar cheese.
  • Step 6
    Bake until the cheese on top is melted. Remove from oven and sprinkle with chopped fresh or dried cilantro.
