Ingredients

  • 1/2 c
    chopped onion
  • 1/4 c
    chopped green bell pepper
  • 2 Tbsp
    cooking oil
  • 1 c
    uncooked long-grain white rice
  • 1/2 c
    canned tomatoes with green chilies
  • 1/4 tsp
    ground turmeric
  • 1 tsp
    ground cumin
  • 1/2 tsp
    salt
  • 1/4 tsp
    garlic powder
  • 2 c
    water
  • 2-3 Tbsp
    chopped fresh cilantro

How to Make Lone Star Rice

Step-by-Step

  1. In a skillet, sauté the onion and green pepper in oil for about 2 minutes.
  2. Add the rice and stir until coated with oil.
  3. Add the tomatoes, turmeric, cumin, salt, garlic powder and water, and bring to a boil. Reduce heat, cover and simmer about 20 minutes or until liquid is absorbed.
  4. Stir in fresh chopped cilantro, and serve.
