I try to make a dish that I can take to work at the beginning of the week and I was delightfully surprised on how good it tasted. I will be adding this dish to my turn to dish.

Ingredients

  • 1 cup long grain rice, uncooked
  • 1 can black beans, canned
  • 1 can unsalted corn
  • 1 can rotel tomato and chili pepper sauce
  • 1 small chopped onion
  • 1 clove garlic chopped

How To Make light and tasty black bean and rice side

  • Step 1
    Cook the rice, Saute' the garlic and onion. Add all the other ingredients (black beans, corn, and the sauce). combine. Serve as a side.
