I try to make a dish that I can take to work at the beginning of the week and I was delightfully surprised on how good it tasted. I will be adding this dish to my turn to dish.

- 1 cup long grain rice, uncooked
- 1 can black beans, canned
- 1 can unsalted corn
- 1 can rotel tomato and chili pepper sauce
- 1 small chopped onion
- 1 clove garlic chopped

Step 1Cook the rice, Saute' the garlic and onion. Add all the other ingredients (black beans, corn, and the sauce). combine. Serve as a side.
