Ingredients
- 2 cups long grain white rice, uncooked
- 4 cups chicken broth
- 1/2 cup water
- 2 - bay leaves
- 1/2 cup shallots, sliced
- 1/2 cup parsley, chopped
- 1/2 cup white onion, minced
- 1 cup celery, minced with tops
- 1 stick butter or margarine
- 1/2 teaspoon thyme
- 1 teaspoon salt
How To Make judy's green rice

Step 1Add bay leaves to chicken broth and bring to a boil.

Step 2Add rice, stir, and return to a boil.

Step 3Cover and cook over low heat for 20 minutes.

Step 4Remove from fire, leave cover on and let sit for 10 minutes.

Step 5Sauté onions, shallots and celery lightly in butter until soft. Add parsley, thyme and salt.

Step 6Combine with rice and mix.

Step 7Add 1/2 cup water if rice mixture seems dry and stir.

Step 8Pour into buttered two quart dish and bake at 350 degrees for 15-20 minutes.
