This is one that the family loves when they come home. I make this every year for my sorority's get together in April. We just love it.

Ingredients

  • 6 slices bacon
  • 1 medium onion
  • 1/2 medium green bell pepper
  • 2 medium green chiles, whole
  • 1 can enchilada sauce (15 oz.)
  • 2 cups white rice uncooked
  • 1 can tomato paste (small)
  • - enough water to cover rice

How To Make jean's spanish rice

  • Step 1
    Cut the bacon in small pieces. In a large fry pan cook bacon.
  • Step 2
    Add to the bacon with the drippings the onion, green pepper that have been cut in small pieces. Also the green chilli if you use fresh and cook till almost done, if you use a small can of cut green chilies put this in later, I'll tell you when.
  • Step 3
    Now add your uncooked rice to this and cook till the rice gets white (sometimes I cook it till almost a medium dark brown) it gives it a nutting flavor. Now add your can of enchilada sauce and tomato paste and the can of green chilies if not using fresh ones. Cover this with enough water and cook all the liquid out.I also sometimes almost fry it when it's done.
  • Step 4
    add salt and pepper to taste Sprinkle with grated cheddar cheese if you like. Hope you enjoy this like we do. :)
