Great with jerk chicken, to cool off the heat. The raisins can be golden or dark, and are optional. Hubby doesn't like them in his rice...

Ingredients

  • 1 cup chicken broth
  • 1 can coconut milk (13 oz)
  • 1/4 cup golden raisins
  • 1 1/2 teaspoons jerk seasoning
  • 1 package yellow rice mix (10 oz)
  • 1 cup frozen peas

How To Make island style peas & rice

  • Step 1
    Place the first four ingredients in a medium sauce pan (coconut milk thru jerk seasoning). Bring to a boil.
  • Step 2
    Add the rice mix and stir to combine. Bring back to a boil, then reduce to a simmer. Cover and cook for 20 minutes, or until rice is tender and most of liquid has been absorbed.
  • Step 3
    Add the peas and stir gently. Cover and continue cooking for 2-3 minutes until peas are heated. Fluff rice and serve.
