irene's authentic mexican rice

This recipe was given to me while I was visiting friends in PV, Mexico. Even though most of us don't cook with lard, it is essential in this recipe to give it the authentic taste. This is so good! Try it, you'll love it! Blondie

Ingredients

  • 3 tablespoons lard
  • 1 medium onion
  • 3-4 cloves garlic or 1 tbsp
  • 1/2 cup diced carrots
  • 2 cups uncooked white rice
  • 1/2 teaspoon dried mexican oregano or 1 tbs fresh
  • 1/2 teaspoon pure ground cinnamon
  • 1 tablespoon ground cumin
  • 4 cups water
  • 1 cup frozen green peas or frozen green beans
  • 1 cup fresh cilantro, rough chopped

How To Make irene's authentic mexican rice

  • Step 1
    Ina 14" frypan, or 12" deep skillet, heat lard on med-hi. When it is hot, add onion; saute`for 4 minutes, or until onion starts to browned around the edges (this is important for flavor.)
  • Step 2
    Lower heat to medium. Add garlic and carrots; saute` for 2-3 minutes (don't allow the garlic to burn.
  • Step 3
    Add rice; saute` till dark tan. Now add oregano, cinnamon and cumin. Stir well. Add water slowly to pan. (Avoid steaming your hand or arm.
  • Step 4
    When rice cmes to a boil, lower the heat source to a low simmer. Cover with tight fitting lid. DO NOT LIFT LID FOR 22 MINUTES.
  • Step 5
    Now add peas or green beans. DO NOT STIR; cover with lid and remove from heat; set aside for 5 minutes. Now Toss in cilantro just before stirring rice.
  • Step 6
    Fluff the rice with a wooden fork or nylon fork if using non-stick pan. ~~~~~~~~~~~~~~~~~~~~SHARE AND ENJOY~~~~~~~~~~~~~~~~~~~
